Brinjal sambar is a South Indian dish that allows you to give a tasty makeover to otherwise boring eggplants. If you have kids at home who squeeze their nose at aubergines, this recipe will not reveal what they are eating, and soon, they will become fans of this recipe.
For Lentils 1 onion 1 cup tur dal 3 cups water A pinch of hing Salt to taste 1/3 tsp turmeric powder For Tempering 1 tsp black mustard seeds 1 tsp urad dal 3-4 dry red chillies 3 tbsp oil 12-15 curry leaves A pinch of hing
For Sambar 2.5 cups water 300 g brinjals 1 tsp red chilli powder 2-3 tbsp sambar powder 1 tomato 2 tbsp coriander leaves Salt as needed ½ tsp turmeric powder For Tamarind Pulp ½ cup water 2 tbsp seedless tamarind
Add all the ingredients for lentils in a pressure cooker and cook for 3-4 whistles.
Once the pressure is released, open the cooker and add chopped tomatoes, brinjals, and spices.
Add water and put on the lid. Cook for a whistle. Add sambar powder and tamarind pulp.
Let the ingredients simmer while you prepare the tempering.
Pour the tempering over the sambar and garnish it with fresh coriander leaves.
