As the frosty tendrils of winter weave their way through our days, there's a comforting rhythm to be found in the kitchen. And what better way to embrace the season's chill than by embracing the verdant, versatile cruciferous hero: Broccoli.
1/2 cup of fresh coconut 2 tomatoes 2 tablespoons of green chilli 2 tablespoons of fennel 3 garlic cloves 3 cups of water 3 tablespoons of oil 1 bay leaf 2 green cardamoms 3/4 cup of chopped onions 1 tablespoon of chilli powder 1 tablespoon of powdered coriander 1 tablespoon of turmeric A few curry leaves, if needed
Grind and make a paste of coconut, green chilli, fennel seeds, crushed garlic cloves and finely chopped onions.
Add 3 tbsp of oil to a cooking pot and heat it.
Add another tablespoon of fennel seeds, bay leaf, cardamom and garlic cloves.
Sauté it well. Add chilli powder, coriander powder, turmeric powder, curry leaves, tomatoes and salt.
Sauté for another 5 minutes. Add water, coconut paste and cook for 2 minutes.
Remove from the heat and add coriander leaves to it. Serve thakkali kurma, fresh.
