Beetroot raita is a refreshing, colourful side dish made with grated beetroot and chilled curd. It adds vibrancy to the plate while offering a naturally cooling, nutritious balance to everyday meals.
1 cup curd (whisked) ½ cup grated beetroot ½ tsp roasted cumin powder Salt to taste Fresh coriander for garnish
Add grated beetroot to whisked curd and mix until the colour turns evenly pink.
Stir in roasted cumin powder and salt.
Let it rest in the fridge for 10 minutes to chill and develop flavour.
Garnish with coriander and serve with pulao, rotis, or simple dal–rice.
