Breakfast Burrito Recipe For A Filling Morning Meal

This breakfast burrito is packed with protein, fibre, and flavour. Rolled in a soft tortilla, it includes scrambled eggs, sautéed vegetables, and cheese, making it a convenient and satisfying way to start your day.

Ingredients

2 large eggs ¼ cup onion (chopped) ¼ cup bell peppers (chopped) ¼ cup tomato (chopped) ¼ cup grated cheese 1 wheat or multigrain tortilla 1 tsp oil or butter Salt and pepper to taste Optional: chopped spinach, cooked beans, or avocado slices

Step 1

Heat oil in a pan and sauté onions, bell peppers, and tomatoes for 2–3 minutes until slightly soft.

Step 2

In a bowl, beat eggs with salt and pepper, then pour them into the pan with vegetables.

Step 3

Scramble gently on low heat until just cooked. Add grated cheese and let it melt slightly.

Step 4

Warm the tortilla on a tawa or directly over the flame for a few seconds until soft.

Step 5

Place the egg mixture in the centre of the tortilla. Add extras like spinach or avocado if using, then roll tightly and serve warm.
