Ingredients

200g feta cheese, crumbled  150g thick Greek yogurt  1 tablespoon lemon juice  1 tablespoon extra virgin olive oil (plus extra for drizzling)  1 clove garlic, minced  1 cucumber, finely diced  2 ripe tomatoes, seeded and finely diced  1/2 red onion, finely chopped  A handful of pitted kalamata olives, chopped  1 teaspoon dried oregano and fresh parsley

Step 1

Blend the crumbled feta cheese, Greek yogurt, lemon juice, olive oil, and minced garlic in a food processor until completely smooth and creamy.

Step 2

Spread the whipped feta mixture evenly across the bottom of a shallow serving bowl or wide platter using the back of a spoon.
