The mouth-melting boondi ladoo with a yellowish-orange hue is a festive Indian sweet that is popularly made for special occasions. To make the ladoos at home, here is a step-by-step recipe to follow.
1.5 cups besan 1 cup water ½ teaspoon cardamom powder 1 tablespoon ghee, for frying Oil for deep frying 1.5 cups sugar 1 cup water 1/4 teaspoon cardamom powder 2 tablespoons chopped cashews 2 tablespoons chopped pistachios
Sift besan into a large bowl. Gradually add water for a consistent batter.
Heat some oil and pour the batter through a perforated spoon or boondi mould, creating tiny droplets.
Fry until golden brown, then drain on paper towels. Repeat with the remaining batter.
In a separate pan, combine sugar and water. Simmer for a few minutes till the syrup thickens.
Add the fried boondi, cashews, and pistachios to the warm sugar syrup. Mix well.
Shape balls out of the mixture, and the ladoos will be ready to serve.
