The Bombay sandwich is a colourful, comforting street-style favourite layered with potatoes, tomatoes, cucumbers, onions and a generous amount of green chutney. The chaat masala adds the typical Mumbai tang, while the bread stays soft and fresh.
6 slices sandwich bread Butter and green chutney Boiled potato slices Sliced cucumbers, tomatoes and onions Chaat masala and pepper
Spread butter and green chutney evenly on all bread slices.
Layer potatoes, cucumbers, tomatoes and onions.
Sprinkle chaat masala and pepper generously over the vegetables.
Close, press lightly and slice; toast if you prefer a warm version.
