One of the best ways to prepare bitter gourd is to stuff it with a mixture of spices and gram flour. This complements the bitterness and enhances the flavours of the vegetables. Bookmark this recipe to replicate it at home.
4-5 bitter gourds 1.5-inch ginger ¼ cup ghee 1 cup besan 4-5 cups of water Salt to taste 1.5 tsp amchur powder 1 tbsp fennel seeds 1 tsp red chilli powder 1 tsp coriander powder 2-3 tbsp oil
Wash the bitter gourd thoroughly and dip it in water with a sprinkle of salt to tone down its bitterness.
In a kadhai, heat oil and saute all the spices until they are aromatic.
Keep the spices aside and saute besan until it is aromatic.
Mix besan with spices and keep it aside. Take out the bitter gourd from the water solution.
Slice the bitter gourds at the centre and stuff them with the besan and spice blend.
Tie the bitter gourds with threads and fry them until they are cooked and crispy. Enjoy!
