Bhuna kichuri is a healthy, veggie-loaded recipe that you need to make a part of your weekly meals. This Bengali dish has the goodness of cashews, raisins, coconut, and moong dal. It has protein, good fat, and flavour enhancing spices.
3/4 cup moong dal 1 cup gobindo bhog rice 2 tsp ghee 2 bay leaves, red chillies 1 tsp cumin seeds 2 cashew nuts 2 tsp ginger & chilli paste Salt as per taste 1/2 tsp turmeric, cumin 1 tsp sugar 1 green chilies 2 raisins 2 cups water 1 tsp grated coconut 1/2 tsp cardamom powder
Dry roast the moong dal till it turns golden brown. Wash and drain the dal, keep aside.
Heat ghee in a kadhai, add bay leaves, dry red chillies and cumin seeds, and roast for 2-3 seconds. Add cashew nuts and roast for a minute.
Now add rice and moong dal along with ginger chilli paste and all the powder spices. Mix well and keep on cooking on low medium flame for 4-5 minutes.
Add raisins, green chillies and 2 cups of water (2 cups of water is for 3/4th cup of moong dal and 1 cup of rice). Add grated coconut.
Mix, cover and cook on a medium flame for 3-4 minutes or until both rice and dal are completely done.
Add cardamom powder to finish with. Serve hot with any bhaja.
