Bhuna kaleji is made by frying, roasting, or grilling the liver of a sacrificed goat with savoury spices. If you’re looking for Eid al-Adha recipes, try this one!
500g mutton liver 1 tbsp ginger-garlic paste 1 tsp red chilli powder 1 tbsp raw papaya paste ½ tsp black pepper powder ½ tsp garam masala powder 1 tbsp vinegar ½ tsp roasted jeera powder 2 tbsp mustard oil Salt to taste
Combine all the ingredients for the marinade in a bowl. To this masala, add mutton liver.
Let it marinate for 15 minutes. In a wok, heat the oil.
Add the marinated mutton liver mixture to the pan. Cook for 15 minutes on low heat, covered.
The liver should then be opened and dried over high heat. Garnish with chopped coriander leaves.
Your delicious bhuna kaleji is ready to serve!
