Have you ever thought about why your sushi breaks or feels too dry? Most of the time, the rice is to blame. Sushi rice is very important because it keeps each roll together and keeps it soft and slightly sticky. Its texture strikes the right balance between taste, structure, and moisture, making every bite perfect.
2 cups short-grain rice 2½ cups water 3 tbsp rice vinegar 1 tbsp sugar ½ tsp salt
Run water over the rice a few times until it's clean.
On medium heat, cook it in water until it's soft.
Warm rice vinegar and sugar should be mixed together in a small bowl.
While the rice is still warm, slowly fold this mixture into it.
Before you use it for sushi rolls, let it cool down a bit.
