Apple Pie combines a crisp, golden crust with a precisely balanced filling that delivers warm and festive winter flavours. The caramelised finish creates a nice dessert suitable for snack and dessert settings.
2 pie crusts (1 for base, 1 for top) 5 medium apples, sliced thin (about 700 g) 80 g sugar 1 teaspoon cinnamon ¼ teaspoon nutmeg 1 tablespoon lemon juice 25 g butter, cut into small cubes 1 tablespoon flour for coating the apples 1 egg for brushing (optional)
Put the apple slices, sugar, spices, lemon juice in a bowl and mix them together so that the dish has the same taste all over.
Settle the bottom crust in the pie plate and smooth out the surface to get rid of any air pockets.
Put the apple mixture on top, spread it out evenly, and dot the filling with little pieces of butter to keep the moisture level even.
Then top the crust on the dish, seal the edges tightly, and cut a few vents in it so that steam can escape slowly.
Bake until the crust is golden and the filling is thick. Then let it cool for long enough for the structure to set before cutting it.
