Benne dosa is a legendary Karnataka street food classic famous for its golden, crisp exterior, fluffy interior, and generous melting of white butter. Originating from the historic town of Davangere, this distinct dosa uses a special fermented batter cooked exclusively in copious amounts of rich, fresh butter. Served hot alongside spicy coconut chutney and a flavorful potato mash, this authentic morning meal offers an unforgettable breakfast experience that satisfies true South Indian food lovers.
2 cups dosa rice 1/2 cup urad dal (split black gram) 2 tablespoons flattened rice (poha) 1 teaspoon fenugreek seeds (methi) Salt to taste 1/2 cup homemade white butter (benne) for cooking and serving 3 boiled potatoes (for potato filling) 1 onion, finely sliced 1 teaspoon mustard seeds and fresh curry leaves
Soak the dosa rice, urad dal, poha, and fenugreek seeds in water for four to six hours, then grind them into a smooth, slightly coarse batter and ferment overnight.
Prepare a quick spiced potato filling by tempering mustard seeds, curry leaves, and onions in oil, then tossing in boiled mashed potatoes, turmeric, and salt.
Heat a cast-iron tawa on medium heat, pour a ladle of fermented dosa batter, spread it into a thick round circle, and drop a generous tablespoon of white butter around the edges.
Cook on medium-high heat until the base turns deep golden and crisp, fold with the potato filling inside, top with an extra pat of white butter, and serve hot with fresh coconut chutney.
