Bhapa doi is a delicious Bengali dessert made from sweetened yogurt. This creamy treat is often served chilled as the perfect light finish to a spicy meal. The name Bhapa Doi translates to "steamed yoghurt," which refers to the cooking method used. While it may seem intimidating, this dessert is quite easy to prepare at home.

Ingredients

500 g of plain yoghurt   1/2 cup condensed milk 1/4 cup powdered sugar   1/2 teaspoon cardamom powder   Chopped pistachios for garnish

Step 1

In a bowl, whisk together the yoghurt, condensed milk, powdered sugar and cardamom powder until well combined.

Step 2

Pour the mixture into individual ramekins or small bowls.

Step 3

Place the filled ramekins in a pot and add enough water to come halfway up the sides of the ramekins.

Step 4

Bring the water to a boil over high heat. Then reduce the heat to low, cover the pot and steam for 10–15 minutes.

Step 5

Remove the ramekins from the pot and allow them to cool to room temperature before chilling in the refrigerator for 2–3 hours.

Step 6

When ready to serve, garnish with chopped pistachios.
