Made with fresh paneer or chenna and spiced with cardamom and saffron, kacha gola is a well-known dessert from West Bengal. It can be prepared quickly, especially when unexpected guests arrive at your house.
300g of homemade chenna ½ cup powdered sugar 1 tsp cardamom powder A pinch of saffron strands 2 cups milk 1 tbsp lemon juice
To make homemade chenna, boil a litre of milk with lemon juice in it. Simmer until milk curdles, and chenna separates from whey.
Strain whey by passing it through a muslin cloth or kitchen towel.
Hang it to strain the whey from chenna entirely. Remove from muslin cloth, add chenna to a bowl.
Mash the chenna. Break the lumps until it’s smooth. Add cardamom powder, saffron and sugar.
Knead into a dough. Take a plate or tray. Roll the dough into balls and place it on top.
Let it rest until the chenna balls have held together. Serve kacha gola to guests.
