Soft, fragrant and layered with gentle spice, this carrot cake recipe delivers bakery-style texture using fresh grated carrots and simple pantry ingredients. Every slice feels rich yet balanced, perfect with tea or a celebration spread.
1½ cups grated carrot 1 cup maida ½ cup brown sugar ¼ cup oil 2 eggs ½ tsp baking soda 1 tsp baking powder ½ tsp cinnamon powder 1 tsp vanilla extract ¼ tsp salt
Preheat the oven to 180°C and grease a cake tin.
Whisk eggs, sugar, oil, and vanilla until slightly thick.
Fold in the grated carrot gently.
Sift flour, baking powder, baking soda, cinnamon, and salt, then mix into batter.
Pour into tin and bake for 30-35 minutes until a toothpick comes out clean.
