Beetroot Soup: Get A Boost Of Vitamin C With This Healthy Stew

Beetroot soup is a healthy starter recipe that people across age groups can enjoy. It is rich in fibre, vitamin C, manganese, and potassium. If your haemoglobin is down, it might help you increase the levels.

Ingredients

2 garlic cloves 1 tsp butter 1 chopped tomato 1-inch ginger 1.5 cups beetroot 1 bay leaf 2 cups water 1 tsp pepper Mint for garnish Cream for garnish 1 carrot, tomato Salt to taste 2 shallots

Step 1

Add butter in a pressure cooker and saute a bay leaf.

Step 2

Add shallots, garlic, and ginger. After a minute, add the chopped vegetables and salt.

Step 3

Pour water into the pressure cooker and cook the ingredients for 3-4 whistles.

Step 4

Blend the ingredients and strain them through a sieve.

Step 5

Pour the soup into a deep pan and add more water to adjust the consistency.

Step 6

Sprinkle pepper and garnish it with mint leaves and fresh cream.
