A beetroot salad instantly brightens the table with its deep colour and clean flavours. The sweetness of beetroot pairs well with crisp cucumber and the mild sharpness of sliced onions. A light lemon and olive oil dressing lifts everything without overpowering the vegetables. It works beautifully as a simple side or as a refreshing lunch bowl.
2 boiled beetroots (cubed or sliced) ½ cup cucumber (chopped) ½ cup onions (thinly sliced) 1 tbsp lemon juice 1 tbsp olive oil Salt and pepper
Combine beetroot, cucumber and sliced onions in a mixing bowl.
Whisk lemon juice, olive oil, salt and pepper to create a simple dressing.
Pour the dressing over the vegetables and mix gently until coated.
Chill briefly before serving for a fresher taste.
