Beetroot can add a vibrant pink hue and a nutritional boost to any of your favourite recipe. As for summer, you can easily add beetroot to raita. Here’s a 5-minute recipe to upgrade your bowl of curd.
2 beetroot 1 cup dahi 1 tablespoon lemon juice 2 tablespoons olive oil 1 tablespoon chopped mint Salt and pepper to taste
Rinse the beetroots, peel the skin, and grate them.
Add some salt to the grated beetroots to eliminate the extra water content.
Whisk curd, olive oil, lemon juice, salt, and pepper.
Add the grated beetroot to the dahi and mix well.
Garnish with chopped mint leaves and refrigerate for about half an hour before serving.
