Everyone loves having creamy pasta filled with assorted vegetables. To make it healthier and more colourful, you can try this beetroot pasta with this easy recipe.
450g pasta of your choice 2 beetroots 2 cloves garlic 1/4 cup walnuts 1/4 cup Parmesan cheese 2 tablespoons olive oil 1/4 cup vegetable broth 1 tablespoon lemon juice Salt and pepper to taste Fresh herbs for garnish
Boil water with a little salt. Add pasta and cook till it’s soft.
Roast or boil beetroots as per your preference. Chop them into small pieces.
Blend chopped beetroots, garlic, olive oil, vegetable broth, lemon juice, salt, and pepper.
Add the beetroot mixture to the cooked pasta. Season with salt.
Transfer the pasta to a plate, top with grated Parmesan cheese and mixed herbs, and serve.
