Getting a picky eater to finish their lunchbox can feel like a daily task. These bright coloured beetroot parathas make everyday tiffin boxes more exciting. They are soft and also easy to make without making the lunchbox too complicated.

Ingredients

1 cup whole wheat flour ½ cup beetroot, finely grated 2 tbsp curd 1 tbsp ghee or oil ½ tsp cumin seeds ¼ tsp turmeric powder ¼ tsp red chilli powder Salt, to taste Water, as needed Ghee, for cooking

Step 1

In a bowl, mix wheat flour, grated beetroot, curd, cumin, turmeric, chilli powder and salt to make a soft dough.

Step 2

Cover and let this dough rest for about 10 to 15 minutes so that it rolls more easily.

Step 3

Divide the dough into equal parts and roll each of them to make a medium-sized paratha.

Step 4

Heat the tawa and cook each paratha nicely from both sides until golden spots appear and they seem cooked through.

Step 5

Let the parathas cool a bit and pair with curd, chutney or tomato ketchup.
