Beetroot hummus is a colourful and healthy twist on classic hummus, made with chickpeas, tahini, and roasted beetroot. It’s creamy, earthy, and perfect as a spread or dip.
1 cup boiled chickpeas ½ cup boiled beetroot (chopped) 2 tbsp tahini 1 garlic clove 2 tbsp lemon juice 2 tbsp olive oil Salt to taste
Add chickpeas, beetroot, tahini, garlic, lemon juice, and salt to a blender.
Blend until smooth, adding olive oil gradually for a creamy texture.
Adjust seasoning and consistency with a spoonful of water if needed.
Transfer to a bowl, drizzle with olive oil, and serve with pita or crackers.
