A crisp encasing from fluffy batter holding flaky, delicate fish—served with crisp French fries—the fish and chips is the embodiment of an indulgent meal. Serve it with ketchup, tartar sauce or a spicy condiment on the side to make it the perfect meal for two, to enjoy on date night.
4 medium-sized fish fillets ¾ cup all-purpose flour ¼ cup cornstarch 1 teaspoon baking powder 1 teaspoon paprika 300 ml light beer Salt and pepper, to taste Frozen French fries, thawed Oil, for frying
Combine the flour, cornstarch, paprika, salt, pepper and baking soda in a deep bowl.
Heat the oil in a frying pan while using a balloon whisk to combine the dry mixture with the beer into a lumpy batter.
Avoid overmixing so that the batter remains light; dunk one fish fillet into the batter at a time before tipping it into the hot oil.
Fry the fillets for 4-6 minutes before using a slotted spoon to transfer them to a kitchen towel lined dish.
Season the crust with a little flaky salt and continue to fry the chips until crisp.
Once done, place a fillet or two onto a serving plate and fill up the remaining space with French fries.
Serve hot with a tartar sauce, sriracha mayo or ketchup.
