Basanat Panchami welcomes the spring season with all things yellow. Traditionally, in North Indian homes, meethe chawal is prepared for the festival. Why don’t you try making meethe chawal today?
1.5 cups soaked rice 2.5 tablespoons ghee 1.5 cups sugar 1 cup chopped dry fruits 4 green cardamom 4 cloves 1 cinnamon stick Pinch of saffron Pinch of salt
Boil the soaked rice in water, salt, and 2-3 green cardamoms.
In a separate pan, add some ghee and cinnamon and heat till they sputter.
Once aromatic, add rice, saffron, and chopped nuts like almonds, cashews, and raisins.
After everything is mixed, add sugar and cook till it is caramelised.
Keep stirring to coat the rice with sugar syrup.
Garnish with some more chopped dry fruits and serve hot.
