An espresso martini is meant to be sharp, aromatic, and clean, not sweet or syrupy. Using freshly brewed espresso gives the drink its defining crema and depth, while proper shaking creates the light foam that sits on top. This version mirrors what you would expect from a good bar rather than a dessert-style cocktail.
