Banana idli is a sweet and soft twist to the traditional South Indian idli, made with ripe bananas, rava, and a touch of jaggery. It is a healthy and tasty breakfast snack option, especially loved by kids.
1 cup rava 2 mashed ripe bananas ¼ cup grated jaggery (adjust to taste) ¼ cup grated coconut ½ cup yoghurt ¼ tsp cardamom powder ½ tsp baking soda A pinch of salt 1 tbsp ghee Cashews or raisins (optional)
Dry roast rava for 2-3 minutes and let it cool.
In a bowl, mix mashed bananas, jaggery, curd, coconut, and cardamom powder.
Add rava, mix well and let the batter rest for 10 -15 minutes.
Add baking soda, and add a little water if needed to get the idli batter consistency.
Grease the idli moulds, pour the batter and steam for 12-15 minutes until done.
