Banana bread is a classic bake, soft in texture and naturally sweet with ripe bananas. It makes for a comforting tea-time treat or a wholesome breakfast bite.
3 ripe bananas (mashed) 1½ cups whole wheat flour ½ cup jaggery powder or brown sugar ½ cup oil or melted butter 2 eggs (or flaxseed substitute for eggless) 1 tsp baking soda ½ tsp baking powder 1 tsp cinnamon powder A pinch of salt ½ cup walnuts or almonds (chopped)
Preheat oven to 180°C and grease a loaf tin.
In a bowl, mix mashed bananas, jaggery, eggs, and oil.
In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
Fold the dry mixture into the wet mixture, add nuts, and mix gently.
Pour into loaf tin and bake for 35–40 minutes until golden brown.
Cool slightly, slice, and serve.
