Baked vada pav is a lighter version of the traditional fried snack, where spiced potato patties are baked instead of deep-fried and served inside soft pav bread. It delivers the same taste with less oil.
3 medium potatoes (boiled and mashed) 1 onion (finely chopped) 2 green chillies (chopped) 1 tsp ginger-garlic paste ½ tsp turmeric ½ tsp mustard seeds 1 tbsp oil Salt to taste 6 pav buns 1 tbsp gram flour (besan) 2 tbsp water Green chutney and tamarind chutney for serving
Heat oil in a pan, add mustard seeds, ginger-garlic paste, onions, and chillies. Sauté until golden. Add turmeric, salt, and mashed potatoes. Mix well and let it cool.
Shape into small round patties. Brush with a thin layer of gram flour mixed with water.
Bake patties at 200°C for 20 minutes, flipping once midway.
Place each patty inside pav, add chutneys, and serve warm.
