2 sweet potatoes 2 tbsp Greek yoghurt 1 tbsp butter 1 tbsp dressing of your choice Salt to taste 1 cup shredded vegetables
Wash sweet potatoes thoroughly, grease the skin with oil, and toss them inside the oven.
After 15-20 minutes, slice the potatoes with a knife and scoop out half of the sweet potatoes.
Mix the potatoes with shredded cabbage, carrots, and other vegetables.
Stuff this delightful mixture inside the sliced sweet potatoes.
Top it with the dressing of your choice, butter, and Greek yoghurt.
Serve the dish and enjoy with a glass of smoothie or fresh juice on the side.
