Without compromising on taste, these crisp sweet potato fries are a great accompaniment to burgers and roasts, or are enjoyable on their own, when needing something savoury but nutritious. Simple to throw together using a few ingredients, pair them with a creamy aioli or a hand-pounded chimichurri for additional flavour.
500 grams sweet potatoes 2 tablespoons olive oil 2 teaspoons garlic powder 1 teaspoon red chilli powder Salt and pepper, to taste 2 teaspoons parsley, chopped 1 tablespoon parmesan cheese, grated
Pre-heat the oven to 200°C while the sweet potatoes are peeled and cut into ½-inch thick sticks.
Combine the salt and seasonings with olive oil in a large bowl before tossing the sweet potato sticks in the mixture.
Using your hands, ensure that they are thoroughly coated before spreading them out as a single layer on a baking sheet or two.
Bake for 10-12 minutes on one side, until browned and crisp before flipping them to the other side and baking further for another 10 minutes.
Transfer them to a serving platter and sprinkle with parsley and parmesan cheese before serving warm.
