If you are looking to make your healthy eating journey more delicious, you are at the right place. Healthy oat cookies are thick and chewy, packed healthy and nutritious. Waste no time and bake these guilt-free treats:
Wet Ingredients 100 g pitted dates 1/3 cup boiling water 1 egg 3 tbsp honey 3 tbsp coconut oil 1 tsp vanilla essence
Dry Ingredients 1 1/4 cups rolled oats 1/2 cup flaked almonds 1/4 cup desiccated coconut 1/2 cup raisins or sultanas 3/4 cup almond flour 1/2 tsp baking powder 1/2 tsp cinnamon
Preheat oven to 180C. Line a tray with parchment paper.
Add water to roughly chopped date, cover, and let it soak for 10 mins.
Mash with a potato masher or fork until it becomes a paste.
Add egg, honey, coconut oil, and vanilla essence.
Add rolled oats, flaked almonds, desiccated coconut, raisins, almond flour, baking powder and cinnamon. Mix it well
Make 6 cookie dough balls and flatten them as thick rounds.
Bake them in the oven for 20 minutes until golden.
Remove from oven, and leave to cool on the tray.
