Spiced warmly and aromatic when baked, gingerbread cookies are the sign that the holiday season has commenced officially. Paired with hot chocolate or coffee—these deliciously addictive treats are also a great kid-friendly activity to bond over.
½ cup soft butter 11 tablespoons brown sugar ¼ cup maple syrup 1 egg yolk 2 + ¼ cups all-purpose flour 2 teaspoons cinnamon 2 teaspoons dry ginger powder 1 teaspoon vanilla extract 1 teaspoon baking soda ½ teaspoon ground cloves 1 tablespoon milk ½ teaspoon sea salt
Combine the dry ingredients in a bowl and set aside.
Whisk together the eggs and brown sugar until they are creamed and fluffy.
Add the egg yolk, vanilla extract, maple syrup to combine thoroughly.
Tip in the dry ingredients into the wet mix and fold it gently to form a dough.
Divide the dough into two portions and cover with plastic wrap to rest in the refrigerator for 2 hours.
Preheat the oven to 190°C and line baking trays with parchment paper.
Roll the dough to a ½-inch thickness onto a well-floured surface and use cookie cutters of the desired shape to cut out pieces.
Place the cookies on the baking tray and bake them for 7-9 minutes until the edges are crisp but the middle is soft.
Cool completely before transferring it to a box or decorate as desired.
