Baisakhi marks the beginning of the new year. So, to celebrate the beginning and in the spirit of the harvest season, eating meethe chawal has been an old tradition. To make meethe chawal this year, here’s a step-wise recipe that you can follow.
Soaked rice - 1.5 cups Ghee - 2.5 tablespoons Sugar - 1.5 cups Chopped dry fruits - 1 cup Green cardamom - 4 Cloves - 4 Cinnamon stick - 1 Pinch of saffron Pinch of salt
Boil the soaked rice in water, salt, and 2-3 green cardamoms.
In a separate pan, add some ghee and spices like cloves, cardamom, and cinnamon stick and heat till the sputter.
Once aromatic, add the cooked rice, saffron, and chopped nuts like almonds, cashew nuts, and raisins.
After everything is mixed, add sugar and cook till it is caramelised.
Keep stirring to coat the rice with sugar syrup.
Garnish with some more chopped dry fruits and serve hot.
