Monsoon evenings call for desserts that offer deep comfort, rich textures, and a warming touch of alcohol to counter the damp chill outside. Traditional tres leches relies on a light sponge soaked in three milks, but infusing this classic Latin American creation with Baileys Irish Cream elevates it into a sophisticated adult indulgence. The buttery sponge absorbs a decadent blend of condensed milk, evaporated milk, heavy cream, and a generous pour of whiskey liqueur, transforming into a melt-in-the-mouth masterpiece.

Ingredients

1 sponge cake base (baked vanilla or butter sponge), poked with holes 1 tin (400g) condensed milk 1 tin (350ml) evaporated milk 150ml heavy whipping cream 120ml Baileys Irish Cream liqueur 200ml fresh whipped cream for topping Cocoa powder or chocolate shavings for garnish

Step 1

Whisk the condensed milk, evaporated milk, heavy whipping cream, and Baileys Irish Cream together in a large jug until completely smooth and well combined.

Step 2

Place your freshly baked and slightly cooled sponge cake in a deep baking dish, and use a skewer or fork to poke holes all over the surface.

Step 3

Pour the rich three-milk Baileys mixture slowly and evenly over the sponge, making sure the liquid absorbs fully into the crumb.

Step 4

Cover the dish and refrigerate for at least four hours or overnight, then top with a thick layer of whipped cream and chocolate shavings before slicing.
