If you belong to the brinjal-hating community, you have definitely not tried baigan ka bharta. The ultimate recipe that makes aubergines a delight. The flavours of smoked garlic and juicy tomatoes make this dish a treat for the taste buds.
1 eggplant 2-3 garlic cloves 2-3 green chillies 1-inch ginger 1 onion, tomato Salt to taste 1 tbsp olive oil 1 tsp mustard seeds 1 tsp chilli powder, coriander powder ½ tsp garam masala, turmeric
Grease the brinjal with oil, make cuts in it and insert garlic and chillies, and roast it.
Grease the tomatoes also and roast them. When chillies and garlic are done, pound them with some salt and ginger.
Remove the skin of tomatoes and brinjal when they are done and keep them aside to cool off.
Sauté ginger-garlic paste and onions with mustard oil and turmeric powder.
Add mushed tomatoes and brinjal into the pan and saute with the remaining spice powders.
Garnish with coriander leaves and drizzle lemon juice before serving.
