Badam halwa is a rich and velvety Indian sweet made from almonds, milk, ghee, and sugar. Its smooth texture and nutty aroma make it a festive favourite served warm or at room temperature.
1 cup almonds (badam) ¾ cup sugar ½ cup ghee 1 cup milk ¼ tsp saffron strands ½ tsp cardamom powder
Soak almonds overnight or in hot water for an hour, peel off the skins, and grind with milk into a smooth paste.
Heat ghee in a heavy-bottomed pan and add the almond paste.
Cook on low flame, stirring continuously until it thickens and releases a pleasant aroma.
Add sugar and saffron soaked in warm milk, then cook till the halwa turns glossy and leaves the sides of the pan.
Stir in cardamom powder, mix well, and serve warm, garnished with slivered almonds.
