Creamy avocado mashed with a hint of lemon and spice, layered on crisp whole-grain bread, is a simple, flavourful breakfast that’s satisfying, fresh, and endlessly customisable.
2 slices whole-grain bread 1 ripe avocado 1 tsp lemon juice Salt and pepper to taste ¼ tsp chilli flakes 1 tsp pumpkin seeds ½ tsp olive oil
Toast the bread slices until golden.
Mash avocado with lemon juice, salt, and pepper.
Spread avocado mixture evenly on toast.
Sprinkle chilli flakes and pumpkin seeds on top.
Drizzle olive oil and serve immediately.
