Hectic weekdays call for breakfast that is quick and healthy. This avocado sandwich can be prepped in minutes, making it perfect for a breakfast that feels light but also keeps you full for longer.
2 slices whole wheat bread 1 ripe avocado 1/2 tsp salt 1/2 tsp black pepper 1/2 tsp lemon juice 2 tbsp chopped vegetables (onion, tomato, cucumber) 1 tsp butter or olive oil
On a pan or toaster, toast the bread slices lightly until crisp and golden. Apply a thin layer of butter on it.
Take one ripe avocado, scoop out its pulp in a bowl, and mash it lightly to make a smooth but also slightly chunky mixture.
Now, sprinkle some salt, black pepper, and lemon juice on the mashed avocado and mix to enhance the flavour.
Add finely chopped onion, tomato, or cucumber to this mixture to add some crunch.
Spread this mixture generously over the slice of toasted bread.
Now, top it up with the second bread slice, press it gently, cut into equal halves, and serve with ketchup.
