Undhiyu is a slow-cooked mixed vegetable dish that brings out the warmth of Gujarati winter spices. It is rich, comforting and made with seasonal produce that becomes soft and flavourful as it cooks.
Winter vegetables (surti papdi, potatoes, purple yam) ½ cup methi muthia 2 tbsp undhiyu masala 2 tbsp oil Salt, coriander and lemon juice
Heat oil in a heavy pot and cook undhiyu masala until it releases its aroma.
Add all the chopped vegetables and coat them well in the spiced oil.
Sprinkle salt and cook on low heat so the vegetables soften slowly.
Add methi muthia and continue cooking until everything becomes tender.
Finish with coriander and lemon juice before serving.
