If you’ve ever walked the streets of Surat, you know that Cold Coco isn’t just chocolate milk, it’s an institution. It’s thick, velvety, and almost like a drinkable pudding. The secret to that signature luscious consistency isn't cream, but a patient reduction of milk with a hint of cornstarch. It’s the ultimate comfort drink for chocolate purists who want something more substantial than a standard shake.
500ml full-fat milk 2 tbsp high-quality unsweetened cocoa powder 1 tbsp cornstarch (cornflour) 4 tbsp sugar (adjust to taste) 1/2 tsp vanilla extract Chocolate shavings for garnish
Whisk the cocoa powder and cornstarch into 1/4 cup of cold milk until it’s a smooth, lump-free slurry.
Bring the remaining milk and sugar to a boil in a heavy-bottomed pan.
Lower the heat and slowly pour in the cocoa-cornstarch mixture, whisking constantly to prevent clumps.
Simmer for 5–7 minutes until it thickens enough to coat the back of a spoon. Let it cool, then refrigerate for at least 4 hours, this step is crucial for the texture.
Before serving, give it a quick whisk or a 5-second blend to make it frothy. Pour over ice and top with chocolate shavings.
