Rajasthan kadhi is a delight for the taste buds as its tangy and spicy notes play a symphony in your mouth. When paired with steamed rice and topped with aloo ki sabzi or bhindi, the bowl represents a comforting meal. Here is the recipe.
1 cup curd 2 cups water 4 tbsp besan ½ tsp turmeric, cumin Salt as needed 2 tbsp ghee 2 green chillies ½ tsp mustard, methi seeds A pinch of hing 1 tsp red chilli powder 2 tbsp coriander leaves 2 dry red chillies 1 bay leaf
Mix curd, besan, salt, water, and turmeric powder in a bowl. Make a lump-free batter.
Heat ghee in a kadhai, and add mustard seeds, methi seeds, and green chillies.
After sauteing for a minute, pour the besan batter and stir continuously.
Once the mixture comes to a boil, let it simmer and thicken.
At the end, adjust the consistency and temper with hing, red chillies, bay leaf, and mustard seeds.
Garnish the kadhi with coriander leaves and serve it.
