Ragi Ambil is a traditional, fermented "power drink" from Maharashtra and Karnataka that serves as a natural probiotic. It combines the calcium-rich benefits of finger millet (Ragi) with the cooling properties of buttermilk. It’s a gut-healing elixir that helps maintain a lower body temperature and keeps your energy levels stable during peak summer.
3 tbsp Ragi (Finger Millet) flour 1 cup water 1 cup fresh, thin buttermilk 1/2 tsp roasted cumin powder 1 green chili, slit (optional) Salt to taste and fresh coriander for garnish
Mix the ragi flour with half a cup of water to create a smooth, lump-free paste.
Bring the remaining water to a boil, then slowly whisk in the ragi paste.
Cook on low heat for about 5 minutes until the mixture looks glossy and thick; let it cool completely.
Whisk in the buttermilk, cumin powder, salt, and green chili. Serve chilled with a sprinkle of fresh coriander.
