Mango Mastani is a legendary, thick dessert drink born on the streets of Pune, named after the beautiful Queen Mastani for its sheer royalty and indulgence. Far grander than a routine fruit shake, this rich creation features a velvety, concentrated mango milkshake base that is served thick enough to be eaten with a spoon. Crowned with a massive scoop of vanilla or mango ice cream, a heavy shower of slivered dry fruits, and bright tutti frutti, it provides a spectacular, multi-textured summer celebration.
2 cups sweet Alphonso or Kesar mangoes, chopped (plus 1/4 cup extra for assembly) 1 cup full-fat whole milk, thoroughly chilled 2 tbsp sugar (adjust based on fruit sweetness) 2 large scoops vanilla or mango ice cream 1 tbsp sliced almonds and pistachios 1 tsp tutti frutti or glacé cherries for garnish
Blend the chopped mangoes, chilled whole milk, and sugar together in a blender on high speed until it forms an incredibly thick, smooth, and uniform puree without any fruit lumps.
Drop a generous spoonful of fresh, finely diced mango pieces at the bottom of two tall serving glasses to create a texture base.
Pour the thick mango milkshake over the diced fruit pieces, filling each glass up to about three-quarters full.
Top each glass with a massive scoop of premium ice cream, then garnish lavishly with the slivered almonds, pistachios, and a scatter of colourful tutti frutti.
