Akuri is a legendary Parsi breakfast dish that elevates the humble scrambled egg into a vibrant, flavourful masterpiece. Unlike its firm Western counterpart, a true classic Akuri is intentionally kept soft, creamy, and wonderfully loose. Whisked gently with a robust base of finely chopped onions, sharp green chillies, fresh coriander, and a subtle blend of everyday warm spices, it delivers an incredible balance of heat and comfort. It is traditionally served piping hot alongside heavily buttered, soft pav or toasted slices of crusty bread.

Ingredients

4 large eggs  1 medium red onion, finely chopped  1 small tomato, finely chopped  2 green chillies, finely sliced  1/2 tsp ginger-garlic paste  1/4 tsp turmeric powder and 1/2 tsp red chilli powder  2 tbsp fresh coriander leaves, finely chopped  1.5 tbsp butter or oil  Salt to taste

Step 1

Crack the eggs into a medium bowl, add a pinch of salt, and whisk them gently until the yolks and whites are just combined, then set aside.

Step 2

Heat the butter or oil in a wide, non-stick frying pan over medium heat, add the chopped onions and green chillies, and saute for 3 to 4 minutes until the onions turn soft and translucent.

Step 3

Stir in the ginger-garlic paste, turmeric, and red chilli powder, followed closely by the chopped tomatoes, cooking the mixture for just 2 minutes until the tomatoes begin to soften but do not turn completely mushy.

Step 4

Turn the heat down to low and pour in the whisked eggs, stirring continuously and gently with a spatula to form small, velvety soft curds.

Step 5

Scatter the fresh coriander over the top and remove the pan from the heat source while the eggs are still slightly runny and glossy, allowing the residual heat to finish cooking them to a perfect creamy consistency.
