Moong dal mangodi are sun-dried nuggets made from ground moong dal paste. They’re used in curries, stews, and snacks, adding earthy flavour and protein to traditional Indian dishes.
1/2 cup moong dal mangodi 2 tbsp oil or ghee 1 tsp cumin seeds 1 finely chopped onion 2 pureed tomatoes 1 tsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder Salt to taste 2 cups water Fresh coriander (for garnish)
Heat oil in a pan and fry mangodis on low flame till golden and set aside.
In the same pan, add cumin seeds, let them splutter. Sauté onions till golden.
Add ginger-garlic paste, cook for a minute, then mix in tomato puree and cook till oil separates.
Add turmeric, chilli, coriander powders and stir well.
Pour water, bring to a boil, add fried mangodis and cook them covered, for 10-12 minutes till mangodis soften.
Garnish with fresh coriander and serve hot with roti or rice.
