Tender mutton slow-cooked in aromatic spices and curd gives this mutton rogan josh recipe its deep colour and rich taste, making it a classic Kashmiri curry that pairs beautifully with rice or buttery naan.
500 gm mutton 3 tbsp mustard oil 2 onions, sliced 1 cup curd 2 tsp ginger garlic paste 2 tsp Kashmiri red chilli powder 1 tsp fennel powder 1 tsp dry ginger powder 1 tsp garam masala 2 bay leaves 2 black cardamoms Salt as required 2 cups water
Heat mustard oil and cook bay leaves, black cardamoms, and onions until golden.
Add ginger garlic paste and mutton then cook on high heat for 8 minutes.
Mix curd with chilli powder, fennel powder, dry ginger powder, and salt then add to the pan.
Pour water and cook covered for 45 to 50 minutes until the mutton turns tender.
Finish with garam masala and serve hot with steamed rice or naan.
