Mohanthal is a legendary traditional Gujarati sweet made from roasted gram flour (besan), infused with cardamom, saffron, and sugar syrup, and set into rich diamond-shaped fudge pieces. Known for its crumbly texture and luxurious ghee aroma, it forms an indispensable part of grand festive spreads, Diwali celebrations, and family gatherings.

Ingredients

2 cups coarse gram flour (besan) 1/3 cup melted pure ghee 3 tablespoons warm milk 1 cup granulated sugar 1/2 cup water 1/2 teaspoon cardamom powder A pinch of saffron strands 2 tablespoons sliced almonds and pistachios for garnish

Step 1

Mix the coarse besan, melted ghee, and warm milk thoroughly in a bowl, then rub it between your palms to create fine breadcrumbs and rest for thirty minutes.

Step 2

Sift the mixture through a coarse sieve to ensure an even, pebble-like texture.

Step 3

Heat remaining pure ghee in a heavy-bottomed pan, add the prepared besan mixture, and roast continuously on low heat for twenty to twenty-five minutes until golden and deeply aromatic.

Step 4

Boil sugar and water to a single-thread consistency, stir in the saffron and cardamom, pour it into the hot roasted besan.

Step 5

Mix well until it thickens, and set it in a greased tray to garnish with nuts before slicing.
