A jar of homemade chilli oil instantly upgrades noodles, momos, or fried rice with bold aroma and layered spice. Hot oil releases the fragrance of garlic and chilli flakes, creating a punchy condiment you’ll reach for daily.
½ cup neutral oil 2 tbsp red chilli flakes 1 tsp sesame seeds 3 finely chopped garlic cloves 1 finely chopped small shallot ½ tsp sugar ½ tsp salt
Place chilli flakes, sesame seeds, sugar, and salt in a heatproof bowl.
Heat oil until hot but not smoking.
Add garlic and shallots to the bowl with chilli flakes.
Carefully pour hot oil over; let the mixture sizzle.
Stir well and cool completely before storing.
