Atta halwa is a delightful, traditional sweet that is prepared during Ashtami for kanya pujan. Prepared with simple ingredients, this rich, ghee-laden halwa is warm, fragrant, and an important part of the Navratri bhog thali.
1/2 cup whole wheat flour (atta) 1/2 cup sugar 1/2 cup ghee 1 1/2 cups water 2 tbsp chopped nuts (almonds, cashews) 1/2 tsp cardamom powder
In a pan, heat the ghee on a low flame. Now, add whole wheat flour and roast it slowly, and mix it constantly to avoid lumps.
Keep the flame low and roast the atta until it appears to be golden brown and you smell a nutty fragrance. This will indicate that it has been cooked well.
In another pan, heat water, put sugar and let it dissolve fully, making a simple syrup that will mix smoothly into the roasted flour.
Now, carefully pour the hot sugar syrup into the roasted atta, and stir constantly so that there is no lump formation.
Cook on low flame until the mixture thickens, absorbs ghee and turns shiny. Add the cardamom powder and mix it well for flavour.
Garnish with chopped nuts and serve warm atta halwa as a part of Ashtami bhog thali.
