Curry Leaves Podi also known as Karivepaku Podi is a traditional condiment from Andhra Cuisine. Made with fresh curry leaves, lentils and spices, this dry chutney powder is simply delicious and can spice up your meal anytime. Here is how to make curry leaves podi.
1 cup curry leaves / karibevu / kari patta / karuveppilai / karivepaku 2 tsp oil ¼ cup chana dal 2 tbsp urad dal 1 tsp coriander seeds small piece tamarind / imli 4 dried red chilli 2 tbsp coconut, dried/desiccated pinch hing / asafoetida ½ tsp salt
In a large pan dry roast, curry leaves on low flame. Roast till the curry leaves turn crunchy.
Then transfer the roasted curry leaves to a blender.
Use the same tawa heat oil and roast chana dal, urad dal and coriander seeds. Roast until the dal turns golden.
Then add a small piece of tamarind, dried red chilli and coconut (dried/desiccated).
Then transfer into the same blender. Stop and add pinch hing and salt.
Blend it to a fine/coarse powder without adding any water.
Store the curry leaves powder in an airtight container.
